がばっとすくったあと、最初にちょっとゆすります。
それで比重の重い金は砂の下に沈んでいくそうで。
あわてて砂を飛ばすと砂金も一緒に飛んで行くので、なかなか難しいですね。
ちなみに僕が体験したこれは初級コースです。

After you take a quick scoop, you rock it a bit first. That way, the comparatively heavier gold sinks below the sand, apparently. If you toss the sand out in a hurry, you'll toss the gold dust out with it, so it's pretty tricky.
