The correct temperature for the water varies depending on the type of tea.

With gyokuro, sencha and the like, a lower temperature is used in order to draw out the sweetness;

for houjicha, bancha, genmaicha and so on, steep briefly at high temperature to bring out the fragrance.

For ease of reference, the recommended steep time and water temperature are sometimes indicated on the back of the packaging.
